Vermina Vermouth is informed by the vermouth recipes of the late 18th through the mid-20th centuries, before the category became proliferated with innocuous, mass-produced and highly processed products. ‘Heirloom’ ingredients such as gentian root, chamomile, juniper, cinnamon, cardamom and coriander are employed here, enhanced with locally foraged botanicals such as white sage, rosemary and local, organic citrus.
The result is a vermouth that is quite comfortable being served on its own, over ice, with two Castelvetrano olives and an orange wedge. It may also be used to build a cocktail but will perform differently than most commercially available products due to its weight and complexity. We invite you to experiment on your own, but to get you started, we offer the following well-tested recipe:
1 oz. gin
3/4 oz. Vermina red vermouth
1/4 oz. Vermina white vermouth`
1/4 oz. each of Campari, Gran Classico & Amer Nouvelle
Serve over ice in a double Old Fashioned glass
